Strawberry Cheesecake Breakfast Bars
INGREDIENTS
For the crust:
- 1 3/4 cups (175g) rolled oats (certified gluten-free, if needed)
- 1 3/4 cups (160g) sliced raw almonds
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon kosher salt
- 1/4 teaspoon ground cinnamon
- 4 tablespoons cold unsalted butter, cut into 1/2-inch pieces, plus more for pan
- 2 tablespoons pure maple syrup
- 1/4 cup applesauce
For the filling:
- 2 cups (roughly 3/4 pound) ripe strawberries, hulled and cut into small pieces
- 1 heaping tablespoon sugar
- 2 teaspoons lemon juice
- 2 tablespoon cornstarch
- 4 ounces cream cheese, softened to room temperature
- 1/4 cup plain Greek yogurt
