Strawberry Cheesecake Breakfast Bars


INGREDIENTS


For the crust: 


  • 1 3/4 cups (175g) rolled oats (certified gluten-free, if needed)
  • 1 3/4 cups (160g) sliced raw almonds 
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon kosher salt
  • 1/4 teaspoon ground cinnamon
  • 4 tablespoons cold unsalted butter, cut into 1/2-inch pieces, plus more for pan
  • 2 tablespoons pure maple syrup
  • 1/4 cup applesauce


For the filling:


  • 2 cups (roughly 3/4 pound) ripe strawberries, hulled and cut into small pieces
  • 1 heaping tablespoon sugar
  • 2 teaspoons lemon juice
  • 2 tablespoon cornstarch
  • 4 ounces cream cheese, softened to room temperature
  • 1/4 cup plain Greek yogurt
